Ingredients:
1 1/2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
2 large onions, thinly sliced
2 cloves garlic, minced
1 egg, beaten
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons butter
1/4 cup beef broth
1 cup shredded Gruyère or Swiss cheese
Instructions:
1. Preheat the Oven
Set your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
2. Caramelize the Onions
Heat butter in a skillet over medium heat.
Add the sliced onions and cook until caramelized and golden brown, about 20–25 minutes.
Deglaze the pan with a splash of beef broth, stirring until absorbed. Set the onions aside to cool.
3. Mix the Meatloaf Ingredients
In a large mixing bowl, combine ground beef, breadcrumbs, milk, minced garlic, beaten egg, Worcestershire sauce, Dijon mustard, thyme, salt, and black pepper.
Mix until well combined but avoid overmixing.
4. Layer the Meatloaf
Press half of the meat mixture into the prepared loaf pan.
Spread half of the caramelized onions over the meat mixture and sprinkle with half of the shredded cheese.
Add the remaining meat mixture on top, sealing the edges.
5. Bake
Place the meatloaf in the preheated oven and bake for 50–55 minutes, or until the internal temperature reaches 160°F (71°C).
6. Add Toppings and Finish
Remove the meatloaf from the oven and top with the remaining caramelized onions and shredded cheese.
Return to the oven for 5–7 minutes, or until the cheese is melted and bubbly.
7. Serve
Let the meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes, roasted vegetables, or a side salad for a complete meal!
