Steak & Shrimp Yaki Udon

Ingredients:
1 pack udon noodles
8-10 shrimp (tails off, deveined)
1 ribeye or sirloin steak (cut into bite-sized pieces)
3 cloves garlic, minced
1/2 yellow onion, sliced
4 tbsp vegetable oil, divided
1/2 cup bell pepper, chopped
1/2 cup bok choy (green parts only)
Green onions, sliced (for garnish)
Salt & pepper (to taste)
For the Sauce:
2 tbsp oyster sauce
1 tsp hoisin sauce
2 tsp rice vinegar (or mirin)
2 tsp soy sauce
2 tsp brown sugar
1/2 tsp pepper
1 tbsp sesame oil
Instructions:
1. Mix the Sauce: In a small bowl, combine oyster sauce, hoisin sauce, rice vinegar, soy sauce, brown sugar, pepper, and sesame oil. Set aside.
2. Cook the Udon Noodles: Prepare noodles according to package instructions. Once done, toss with a bit of oil to prevent sticking. Set aside.
3. Season the Steak: Season steak pieces with salt and pepper.
4. Cook the Steak: In a skillet over medium-high heat, heat 2 tbsp of vegetable oil. Sear steak pieces until browned on each side (about 1 minute per side). Remove from the pan and set aside.
5. Cook the Shrimp: In the same skillet, add another 1 tbsp oil and cook shrimp for 2-3 minutes per side until pink and cooked through. Set aside.
6. Stir-Fry Veggies: Add the remaining oil, followed by onions, bell peppers, bok choy, and garlic. Sauté for about 3 minutes or until slightly tender.
7. Combine Everything: Add the cooked udon noodles, sauce, steak, and shrimp back into the skillet. Toss everything together until evenly coated in the sauce.
8. Serve: Garnish with sliced green onions. Serve warm and enjoy!
