    5. Sprinkle 1½ cups mozzarella cheese over the top.
    6. Cover and cook on LOW for 2½ to 3½ hours, until pasta is tender and creamy.
    7. Stir gently, then top with remaining ½ cup mozzarella cheese.
    8. Cook another 10–15 minutes until melted, bubbly, and slightly golden.
    9. Let rest 5–10 minutes before serving. Garnish with parsley if desired.
