    Ingredients

    • 1 whole chicken (3½–4 pounds), giblets removed
    • 1 medium green cabbage (2–2½ pounds), cut into 6–8 wedges
    • 1 large yellow onion, sliced
    • 1 tablespoon kosher salt (or 2 teaspoons table salt)
    • 1 teaspoon black pepper (optional)
    • 1 cup water

    Instructions

    1. Prepare the Vegetables

    Place the sliced onions in the bottom of the slow cooker. Arrange the cabbage wedges over the onions, keeping the core attached to help the wedges stay together during cooking.

    2. Season Everything

    Sprinkle part of the salt over the onions and cabbage. Season the chicken generously with the remaining salt and black pepper.

    3. Assemble the Slow Cooker

    Pour the water around the vegetables. Place the whole chicken breast-side up on top of the cabbage wedges.

    4. Slow Cook

    Cover and cook on:

    • LOW for 6–8 hours, or
    • HIGH for 3½–4 hours

    The chicken should reach an internal temperature of 165°F (74°C) and be tender enough to shred easily.

    5. Rest and Shred

    Allow the chicken to rest for 10 minutes. Remove it carefully, shred or carve the meat, and return it to the slow cooker with the cabbage and onions.

    6. Serve

    Ladle the flavorful broth over the chicken and vegetables. Serve hot with mashed potatoes, rice, egg noodles, or crusty bread.
