    Roasted Asparagus and Carrots with Garlic and Herbs

    Looking for an easy and healthy side dish? This Oven-Roasted Asparagus and Carrots recipe is the perfect blend of crisp-tender vegetables, savory garlic, aromatic herbs, and zesty lemon. Packed with Mediterranean flavors and ready in under 30 minutes, this garlic herb roasted vegetable side is ideal for family dinners, meal prep, or holiday feasts!

     

    Ingredients:

    1 lb fresh asparagus, trimmed

    1 lb carrots, peeled and chopped into 1-inch pieces

    2 tbsp olive oil (extra virgin for best flavor)

    1 tsp salt

    ½ tsp black pepper

    ½ tsp garlic powder

    1 tsp dried thyme

    1 tbsp fresh lemon juice

     

    Directions:

    1. Preheat oven to 400°F (200°C).

    2. In a large bowl, toss asparagus and carrots with olive oil, salt, pepper, garlic powder, thyme, and lemon juice.

    3. Spread the vegetables evenly on a baking sheet lined with parchment paper.

    4. Roast for 15–20 minutes, flipping halfway through, until vegetables are tender and golden on the edges.

    5. Serve warm as a perfect side for chicken, salmon, or grain bowls.

    Prep Time: 10 minutes
