    No-Bake Pumpkin Cheesecake Balls

     

    Looking for a quick and irresistible pumpkin dessert? These No-Bake Pumpkin Cheesecake Balls are the perfect blend of creamy pumpkin, warm fall spices, and sweet graham cracker coating. They make an easy, bite-sized treat for Thanksgiving, Halloween, or cozy autumn snacking!

     

    Ingredients:

    8 oz cream cheese, softened

    1 cup pumpkin puree (not pumpkin pie filling)

    1/2 cup powdered sugar

    1/2 tsp ground cinnamon

    1/4 tsp ground nutmeg

    1/4 tsp ground ginger

    1/2 tsp vanilla extract

    1 cup graham cracker crumbs

    1/2 cup white chocolate chips (optional, for coating)

    Additional cinnamon-sugar for rolling (optional)

     

    Instructions:

    1. Mix the Pumpkin Cheesecake Filling:
    In a large bowl, beat softened cream cheese until smooth. Add pumpkin puree, powdered sugar, cinnamon, nutmeg, ginger, and vanilla extract. Mix until creamy and fully combined.

    2. Chill the Mixture:
    Place the mixture in the fridge for 30 minutes. This helps firm it up and makes it easier to roll into balls.

    3. Roll into Balls:
    Scoop about 1 tablespoon of the mixture and roll into 1-inch balls using your hands or a small cookie scoop.

    4. Coat the Cheesecake Balls:
    Roll each pumpkin ball in graham cracker crumbs. If desired, melt white chocolate chips in the microwave (30-second bursts, stirring in between) and dip the balls. Let the excess chocolate drip off, then re-roll in graham cracker crumbs for an extra layer of flavor and texture.

    5. Final Chill:
    Arrange the coated cheesecake balls on a parchment-lined tray and refrigerate for another 30 minutes until set.

    6. Serve & Enjoy:
    Serve these chilled no-bake pumpkin cheesecake bites as a festive party dessert, holiday snack, or cozy fall treat!
