    Looking for the best soft pretzel recipe with cheese? These homemade mozzarella stuffed pretzels are soft, golden, and filled with melty cheese and fresh herbs! Perfect as a party appetizer, game-day snack, or a savory treat, this easy recipe uses simple pantry staples and delivers bakery-quality results every time.

    Ingredients:

    For the Pretzel Dough:

    3 ½ cups all-purpose flour

    1 packet (2 ¼ teaspoons) active dry yeast

    1 cup warm water

    1 tablespoon sugar

    1 teaspoon salt

    For the Cheesy Mozzarella Filling:

    8 oz fresh mozzarella, cut into small cubes

    2 tablespoons chopped fresh rosemary

    ¼ cup grated Parmesan cheese

    For the Baking Soda Bath:

    4 cups water

    ¼ cup baking soda

    Topping:

    Extra grated Parmesan cheese

    Fresh rosemary leaves (for garnish)

    Instructions:

    1. Make the Pretzel Dough:
      In a large bowl, mix the warm water, sugar, and yeast. Let sit for 5 minutes until frothy. Add flour and salt, then knead until the dough is soft and elastic. Cover with a towel and let it rise for 30–45 minutes, or until doubled in size.
    2. Preheat & Prepare Filling:
      Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. In a small bowl, mix mozzarella cubes, rosemary, and Parmesan cheese.
    3. Shape the Pretzels:
      Divide the dough into 8 portions. Roll each into a rope, flatten, and place the cheese mixture in the center. Fold and seal the dough around the cheese, then twist into a classic pretzel shape.
    4. Baking Soda Bath:
      Bring 4 cups of water to a near boil. Remove from heat and carefully stir in baking soda. Dip each pretzel in the bath for 30 seconds, then place on the baking sheet.
    5. Top & Bake:
      Sprinkle with more Parmesan and rosemary. Bake for 12–15 minutes until golden brown. Serve warm and gooey!
