    Ingredients:

    2 large eggs

    1 tsp butter or olive oil (for cooking)

    Salt & freshly ground black pepper to taste

    1 slice of whole grain or sourdough bread

    1/2 ripe avocado, mashed

    A handful of fresh blueberries

    Optional: chili flakes, lemon juice, or microgreens for garnish

    Instructions:

    1. Scramble the Eggs:
    Heat butter or olive oil in a non-stick pan over medium heat. Crack the eggs into a bowl, season with salt and pepper, and whisk well. Pour into the pan and cook gently, stirring slowly until soft and fluffy. Remove from heat.

    2. Prepare the Avocado Toast:
    Toast your bread slice until golden. Spread mashed avocado on top and season with salt, pepper, and a squeeze of lemon juice if desired.

    3. Assemble Your Plate:
    Add scrambled eggs and avocado toast to your plate. Top the toast with chili flakes or microgreens if you like. Finish with a generous handful of fresh blueberries on the side.
