    Garlic Parmesan Chicken Meatloaf 

     

    Garlic Parmesan Chicken Meatloaf 

     

    Looking for a juicy, flavorful dinner idea? This Garlic Parmesan Chicken Meatloaf combines tender ground chicken with gooey mozzarella, savory Parmesan, and a crispy garlic-butter topping. It’s easy to make and packed with comforting flavors perfect for a weeknight meal!

    Ingredients:

    For the Meatloaf:

    1 lb ground chicken

    1/2 cup breadcrumbs (Panko works well)

    1/3 cup grated Parmesan cheese

    1/2 cup shredded mozzarella cheese

    1 egg, lightly beaten

    3 cloves garlic, minced

    1/2 small onion, finely diced

    1 tsp Italian seasoning

    Salt and pepper to taste

    2 tbsp fresh parsley, chopped

    1 tbsp olive oil

    For the Garlic Parmesan Topping:

    1/4 cup grated Parmesan cheese

    1/4 cup breadcrumbs

    2 tbsp melted butter

    1 clove garlic, minced

    Instructions:

    1. Preheat the Oven:

    Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

    2. Prepare the Meatloaf Mixture:

    In a large mixing bowl, combine ground chicken, breadcrumbs, grated Parmesan, mozzarella, beaten egg, garlic, onion, Italian seasoning, salt, pepper, and fresh parsley.

    Mix until just combined avoid overmixing to keep the meatloaf tender.

    3. Shape the Meatloaf:

    Transfer the mixture to the loaf pan or baking sheet, shaping it into a loaf.

    4. Make the Garlic Parmesan Topping:

    In a small bowl, mix Parmesan cheese, breadcrumbs, melted butter, and minced garlic until well combined.

    Spread the topping evenly over the meatloaf.

    5. Bake:

    Bake for 35–40 minutes or until the internal temperature reaches 165°F (74°C) and the top is golden and crispy.

    6. Serve:

    Let the meatloaf rest for 5 minutes before slicing. Garnish with fresh parsley and serve with your favorite sides like mashed potatoes or roasted vegetables.
