Creamy Tuscan Salmon with Spinach & Cherry Tomatoes

Ingredients:
4 skinless salmon fillets
2 tbsp olive oil
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup baby spinach
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions:
1. Prepare the Salmon:
Season salmon fillets with salt, black pepper, and a sprinkle of Italian seasoning on both sides.
In a skillet, heat 1 tbsp olive oil over medium-high heat. Sear salmon fillets for 3-4 minutes per side until golden and cooked through. Set aside.
2. Make the Creamy Tuscan Sauce:
Lower heat to medium, add remaining olive oil, and sauté minced garlic for 30 seconds.
