Creamy Amish Chicken and Scalloped Potato Casserole Recipe

This creamy Amish chicken and scalloped potato casserole is the ultimate comfort food dinner for busy weeknights, Sunday suppers, and family gatherings. Made with just 4 simple ingredients, this easy baked chicken casserole delivers tender potatoes, juicy chicken, and a rich homemade-style creamy sauce in every bite. Inspired by classic Midwestern and Amish recipes, this hearty casserole is budget-friendly, filling, and perfect for feeding a crowd.

Why You’ll Love This Amish Chicken Casserole

    • Easy 4-ingredient dinner recipe
    • Rich, creamy, and comforting flavor
    • Perfect for potlucks, holidays, and meal prep
    • Family-friendly comfort food everyone loves
    • Simple pantry staples with minimal prep
    • Great make-ahead casserole for busy nights

    Servings:

    6 servings

    Ingredients:

    • 2 pounds boneless, skinless chicken thighs or chicken breasts, cut into bite-sized pieces
    • 2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
    • 2 cans (10.5 ounces each) condensed cream of chicken soup
    • 1 ½ cups whole milk or 2% milk

    Optional:

    • Salt and black pepper to taste
    • Butter or cooking spray for greasing the baking dish

    Directions

    1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
    2. In a medium bowl, whisk together the cream of chicken soup and milk until smooth and creamy. Season with salt and black pepper if desired.
    3. Slice potatoes into thin, even rounds to ensure they cook evenly and become perfectly tender.
    4. Spread a thin layer of the soup mixture onto the bottom of the baking dish.
    5. Arrange half of the sliced potatoes evenly in the dish, slightly overlapping them.
    6. Add half of the chicken pieces over the potatoes and spoon some of the creamy sauce on top.
    7. Repeat the layers with the remaining potatoes, chicken, and sauce. Gently tap the dish so the sauce settles into the layers.
    8. Cover tightly with foil and bake for 60 minutes.
    9. Remove the foil carefully and continue baking uncovered for 30–40 minutes, or until the potatoes are fork-tender and the casserole is golden and bubbly.
    10. Let the casserole rest for 10–15 minutes before serving for the best creamy texture.

    Recipe Benefits

This easy chicken and potato casserole is packed with comforting flavors while being incredibly simple to prepare. Potatoes provide hearty texture and satisfying energy, while chicken adds protein to make this a complete family meal. The creamy sauce keeps everything moist and flavorful without needing complicated ingredients or extra cooking steps.

Because this casserole uses affordable pantry staples, it’s also an excellent budget-friendly dinner recipe for large families or meal prepping leftovers for the week.
