    Creamy Alfredo Lasagna Soup

     

    This Creamy Alfredo Lasagna Soup combines the classic flavors of lasagna in a warm, comforting bowl. With rich Italian sausage, creamy cheeses, and tender lasagna noodles, it’s like an Alfredo twist on traditional lasagna. The blend of ricotta, mozzarella, and Parmesan creates a velvety texture that makes every bite irresistible. Perfect for chilly nights, it’s a one-pot meal that’s easy to make and packed with flavor. Garnish with fresh parsley for a hint of color and enjoy a cozy, satisfying dish!

    Ingredients:

    1 lb ground Italian sausage or ground beef

    1 small onion, chopped

    3 cloves garlic, minced

    4 cups chicken broth

    2 cups heavy cream

    1 (14.5 oz) can crushed tomatoes

    8 oz lasagna noodles, broken into bite-sized pieces

    1 teaspoon dried basil

    1 teaspoon dried oregano

    1/2 teaspoon red pepper flakes (optional for a kick)

    Salt and pepper, to taste

    1 cup ricotta cheese

    1/2 cup grated Parmesan cheese

    1 1/2 cups shredded mozzarella cheese

    Fresh parsley, chopped (for garnish)

    Directions:

    1. Cook the Sausage:

    In a large pot, heat a small amount of oil over medium heat. Add the ground Italian sausage (or ground beef) and cook until browned, breaking it apart as it cooks. Drain any excess fat for a leaner soup.

    2. Sauté Onions and Garlic:

    Add the chopped onion to the pot and cook for 2-3 minutes until softened. Then, add the minced garlic and cook for about 30 seconds, until it releases its aroma.

    3. Prepare the Soup Base:

    Pour in the chicken broth, heavy cream, and crushed tomatoes. Mix well. Add the broken lasagna noodles, dried basil, oregano, red pepper flakes (if desired for extra heat), salt, and pepper.

    Bring the mixture to a boil, then reduce to a simmer. Allow the soup to cook for 10-12 minutes, stirring occasionally until the noodles are al dente.

    4. Stir in the Cheeses:

    Once the noodles are tender, add the ricotta, Parmesan, and half of the shredded mozzarella cheese. Stir well until the cheeses melt, creating a creamy Alfredo sauce consistency within the soup.

    5. Serve and Garnish:

    Ladle the hot Alfredo lasagna soup into bowls and sprinkle with the remaining mozzarella. Garnish with fresh parsley for color and flavor.
