Ingredients:
Bang Bang Sauce
1 cup mayonnaise
½ cup Thai sweet chili sauce
1 teaspoon Sriracha (add more for extra heat)
2 tablespoons honey
Chicken
1 ½ pounds boneless, skinless chicken tenderloins
1 cup buttermilk
¾ cup all-purpose flour
½ cup cornstarch
1 large egg, room temperature
1 tablespoon Sriracha
½ teaspoon garlic powder
½ teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon cayenne pepper (optional for extra kick)
2 cups panko breadcrumbs, plain
Canola oil, for frying
Fresh parsley, chopped, for garnish
Instructions:
1. Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth. Set aside.
2. Marinate the Chicken: In a large bowl, combine buttermilk, egg, Sriracha, garlic powder, salt, black pepper, and cayenne pepper (if you like it extra spicy). Add the chicken tenderloins, making sure each piece is well-coated. Let the chicken marinate for 15-30 minutes for maximum flavor.
3. Prepare the Dredging Station: In separate bowls, add the flour, cornstarch, and panko breadcrumbs.
4. Coat the Chicken: Remove each tender from the marinade and dredge first in the flour, then press gently into the panko breadcrumbs to ensure they stick.
5. Fry the Tenders: In a large skillet, heat canola oil over medium heat. Fry the chicken in batches, cooking each side for 3-4 minutes or until golden brown and cooked through.
6. Serve & Garnish: Arrange the crispy chicken tenders on a plate, drizzle with bang bang sauce, and sprinkle with chopped parsley for a pop of color.
