    Ingredients for Creamy Baked Macaroni with Béchamel

    • 320 g macaroni pasta (about 4 cups)
    • 800 ml whole milk (3 1/4 cups)
    • 60 g butter (4 tablespoons)
    • 60 g all-purpose flour (1/2 cup)
    • 150 g shredded mozzarella or emmental cheese (1 1/2 cups)
    • 40 g grated parmesan cheese (1/2 cup)
    • 20 g breadcrumbs (2 tablespoons)
    • 15 ml extra virgin olive oil (1 tablespoon)
    • 10 g fine salt (2 teaspoons)
    • 5 g coarse salt for pasta water (1 teaspoon)
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon nutmeg
    • 1 bay leaf
    • 1 garlic clove, halved (optional)
    • 150 g diced cooked ham (optional)

    How to Make the Best Baked Macaroni with Béchamel Sauce

    1. Prepare the Pasta

    Preheat your oven to 220°C (425°F) with the broiler on. Bring a large pot of water to a boil and season with coarse salt.

    Cooking Tip: Use 1 liter of water for every 100 g of pasta to prevent sticking and ensure even cooking.

    Cook the macaroni 1 minute less than the package instructions for the perfect al dente texture after baking. Drain the pasta, reserve 50 ml of pasta water, and toss with olive oil.

    Top with the remaining shredded cheese, parmesan, and breadcrumbs for an ultra crispy cheesy crust.

    6. Bake Until Golden and Crispy

    Bake for 5–8 minutes until bubbling and golden brown on top.

    Let the baked macaroni rest for 3 minutes before serving. This helps the sauce set and makes serving easier.
