    • 120 g all-purpose flour
    • 2 teaspoons baking powder
    • 2 large eggs
    • 90 g sugar
    • 60 ml vegetable oil or melted butter
    • 60 ml milk
    • Pinch of salt
    • 1 teaspoon lemon zest (optional)

    For Baking

    • Hot water for the water bath (bain-marie)

    How to Make Apple Raisin Flan Cake

    1. Soak the Raisins

    Place the raisins in a small bowl with rum or apple juice for about 10 minutes. Drain and set aside. This keeps the raisins soft and juicy while preventing them from absorbing moisture from the flan.

    2. Prepare the Caramel

    In a saucepan, heat the sugar and water over medium heat without stirring until it turns a deep amber color. Gently swirl the pan for even caramelization.

    Carefully pour the caramel into a 22–24 cm baking mold, coating the bottom and slightly up the sides. Let it cool slightly.

    3. Add the Apples and Raisins

    Remove from the water bath and run a thin knife around the edges. Let cool for 30 minutes, then refrigerate for at least 4 hours or overnight for the best texture and easy unmolding.

    9. Unmold the Dessert

    Invert the cake onto a deep serving plate to catch the delicious caramel sauce. If needed, warm the bottom of the mold briefly with a warm towel to help release the cake.
