    Sun-Kissed Ravioli with Tomato, Asparagus, and Herbs

     

    This Sun-Kissed Ravioli with Tomato, Asparagus, and Herbs is a quick and easy vegetarian pasta recipe that’s full of flavor! Tossed with garlic, olive oil, and fresh basil, this light Italian dinner is perfect for busy weeknights or healthy comfort food cravings.

    Ingredients:

    1 package fresh cheese ravioli
    2 cups cherry tomatoes, halved
    1 bunch asparagus, trimmed and cut into 1-inch pieces
    3 tbsp olive oil
    2 cloves garlic, minced
    ¼ cup fresh basil, chopped
    Salt and pepper, to taste
    Grated Parmesan cheese, for garnish

    Instructions:

    Boil a large pot of salted water and cook the cheese ravioli according to package directions (4–5 minutes). Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant.

    Add cherry tomatoes and asparagus to the pan. Sauté for 5–7 minutes until the asparagus is tender and the tomatoes begin to break down.

    Gently toss in the cooked ravioli, coating it evenly with the vegetables and olive oil sauce.

    Remove from heat and stir in fresh basil. Season with salt and pepper to taste, then garnish with grated Parmesan cheese before serving.
