    Spicy Honey Garlic Chicken Salad

    Ingredients (Serves 2):

    2 boneless, skinless chicken breasts, cubed
    1 tbsp olive oil
    1/2 tsp salt
    1/2 tsp black pepper
    1/2 tsp garlic powder
    2 tbsp honey
    1 tbsp soy sauce
    1 tbsp sriracha
    1 tbsp rice vinegar (or apple cider vinegar)
    2 garlic cloves, minced
    1/2 tsp red pepper flakes (optional for extra heat)
    2 cups fresh lettuce, chopped
    1 medium carrot, diced
    1/2 cup corn kernels (fresh, canned, or frozen)

    Directions:

    1. Heat olive oil in a skillet over medium heat. Season chicken with salt, black pepper, and garlic powder. Cook for 6–7 minutes, stirring occasionally, until golden brown and cooked through.

    2. In a bowl, whisk together honey, soy sauce, sriracha, rice vinegar, minced garlic, and red pepper flakes. Pour over the cooked chicken and stir for 1–2 minutes until the chicken is fully coated and glazed.

    3. Lightly steam carrots for 3–4 minutes until tender. If using canned corn, rinse and drain; if frozen, thaw before use. In a large salad bowl, combine lettuce, carrots, and corn.

    4. Add the spicy honey garlic chicken on top of the salad. Toss gently to mix and serve immediately. Enjoy this healthy spicy chicken salad warm or chilled!
