    Southern Cheddar Corn Muffin Bites

Discover an easy and delicious Southern-style recipe made with just 4 simple ingredients. These cheddar corn muffin bites are golden, crispy on the outside, soft and cheesy on the inside, and perfect for quick snacks, family meals, potlucks, or party appetizers.

Why You’ll Love This Recipe (Benefits)

    • Only 4 simple ingredients — affordable and pantry-friendly
    • Fast & easy — ready in about 15 minutes
    • Crispy golden edges — soft, fluffy centers
    • Cheesy and comforting — melty cheddar in every bite
    • Perfect for any occasion — snacks, potlucks, BBQs, holidays
    • Kid-approved & crowd-pleasing — disappears in minutes

    Yield:

    18–24 mini muffin bites

    Ingredients:

    • 1 (8.5 oz) box cornbread muffin mix (Jiffy-style or similar)
    • 1/3 cup whole milk
    • 1 large egg
    • 1 cup shredded sharp cheddar cheese

    Instructions:

    1. Preheat for crispy perfection

Preheat oven to 400°F (200°C). Place a cast iron skillet or mini muffin pan inside while heating for extra crispy edges.

    2. Mix the batter

In a bowl, combine cornbread mix, milk, and egg. Stir gently until just combined. Do not overmix.

    3. Add the cheese

Fold in shredded cheddar until evenly distributed throughout the batter.

    4. Heat and grease pan

Carefully remove hot skillet and lightly grease with butter or oil.

    5. Scoop and bake

Spoon batter into small mounds or muffin cups (about 2/3 full). Bake for 10–14 minutes until golden brown and set.

    6. Cool & serve

Let rest 3–5 minutes before serving warm.

    Variations & Tips:

    • Add jalapeños or chili flakes for a spicy kick
    • Drizzle honey or brush honey butter for sweet-salty flavor
    • Swap cheddar with pepper jack or mozzarella
    • Use cast iron for the crispiest edges possible
    • Add garlic powder or green onions for extra flavor

    Serving Ideas:

    Perfect with:

    • Chili or beef stew
    • Fried chicken or BBQ
    • Soups and casseroles
    • Party appetizer trays

    Pro Tip:

Do not overmix the batter — it keeps the muffins light, fluffy, and tender inside while creating that signature crispy Southern crust outside.
