    Southern 4 Ingredient Sweet Corn Fritters

    These Southern sweet corn fritters are the ultimate quick comfort food—crispy on the outside, soft and sweet on the inside, and packed with fresh corn flavor.

    Ingredients

    • 2 cups sweet corn kernels (fresh, frozen, or well-drained canned)
    • 3/4 cup self-rising flour
    • 2 large eggs, lightly beaten
    • 1/3 cup granulated sugar (reduce to 1/4 cup for extra-sweet corn)

    Instructions

    1. In a mixing bowl, combine self-rising flour and sugar until evenly blended.
    2. Add the beaten eggs and stir until a thick, sticky batter forms.
    3. Fold in the corn kernels, making sure they are well coated.
      The batter should be thick enough to hold its shape. Adjust with a little flour or water if needed.
    4. Heat about 1/4 inch of oil in a skillet over medium-high heat until hot (a drop of batter should sizzle immediately).
    5. Drop spoonfuls of batter into the oil and lightly flatten each fritter.
    6. Fry for 2–3 minutes per side, until golden brown and crispy.
    7. Drain on paper towels to remove excess oil.
    8. Serve hot and enjoy!
