    Slow-Cooker Whole Chicken Recipe

     

    This Slow-Cooker Whole Chicken recipe is the ultimate set-it-and-forget-it meal, perfect for busy weeknights or lazy weekends. Seasoned with smoked paprika, turmeric, and garlic, it’s packed with rich, aromatic flavors. The slow cooker ensures tender, juicy meat that falls off the bone with minimal effort. It’s versatile, healthy, and pairs well with sides like roasted veggies or mashed potatoes. With easy prep and a foolproof method, this dish is a go-to for comforting, delicious dinners.

    Ingredients:

    Yield: 4 to 6 servings

    1 whole chicken (4- to 5-pound), trimmed of excess fat

    5-7 teaspoons kosher salt (adjust based on weight)

    2 teaspoons black pepper

    6 large garlic cloves, peeled

    2 tablespoons extra-virgin olive oil, plus extra for drizzling

    1 large onion (any variety), cut into ¼-inch slices

    1 large carrot, peeled and quartered lengthwise

    2 teaspoons smoked paprika

    1 teaspoon ground turmeric

    Instructions:

    Step 1: Season the Chicken

    Pat the chicken dry with paper towels. Generously season it inside and out with kosher salt (adjust based on bird size) and pepper.

    Place half of the garlic cloves inside the cavity. Let the chicken rest for 30 minutes or refrigerate uncovered for up to 24 hours for extra flavor.

    Step 2: Prepare the Slow Cooker

    Drizzle 1 tablespoon olive oil in the bottom of a 6- to 7-quart slow cooker. Arrange the onion slices as a base, then place the carrot sticks on top to act as a rack for the chicken.

    Step 3: Cook the Chicken

    Set the chicken on the carrot sticks. Drizzle with 2 tablespoons olive oil and evenly sprinkle smoked paprika and turmeric over the top, ensuring all parts are coated. Scatter the remaining garlic around the chicken.

    Cover and cook on low for 6-7 hours or high for 3½-4 hours. The chicken is done when an instant-read thermometer inserted into the thickest part of the thigh reads 155-165°F.

    Oven Alternative
    No slow cooker? Use a 6-quart Dutch oven. Add ¼ cup water around the chicken, cover, and roast at 300°F for 2½-3 hours, checking for the same internal temperature.

    Tips for Success

    Pair this slow-cooker chicken with roasted vegetables, mashed potatoes, or a fresh salad for a complete meal.

    Save the juices at the bottom of the slow cooker to make a delicious gravy or drizzle over the chicken before serving.
