Slow Cooker Sausage Casserole Recipe
This Slow Cooker Sausage Casserole recipe is a hearty and delicious family meal packed with flavorful sausages, canned tomatoes, cannellini beans, and the perfect spices like sweet smoked paprika and cumin. Ingredients:
2 tsp Sunflower oil (Olive oil is also fine)
454 g Sausages (Usually 6 or 8 sausages)
1 Large Red onion, peeled and chopped
3 Cloves Garlic, peeled and crushed
800 g Tinned chopped tomatoes (2 tins)
400 g Tinned cannellini beans, drained and rinsed
2 tbsp Tomato puree
2 tsp Cumin
2 tsp Sweet smoked paprika
1 Beef stock cube
300 g Carrots, peeled and chopped
Sea salt and freshly ground black pepper, to taste
Instructions:
1. Brown the Sausages: Pan fry the sausages until browned all over. (If using a slow cooker with a stovetop-safe pan, you can do this directly in the slow cooker.)
2. Add Ingredients to Slow Cooker: Add all remaining ingredients, including tinned chopped tomatoes, cannellini beans, and spices, to the slow cooker. Stir well and cover with the lid.
3. Cook: Set your slow cooker to HIGH for 6 hours or LOW for 8 hours.
4. Final Steps: Stir everything well before serving. For easier serving, cut the sausages using scissors.
Notes:
Onions and Garlic: You can use pre-prepared frozen, chopped onions and garlic. One onion weighs about 150g, and garlic is roughly 5g per clove (use 15g for 3 teaspoons of crushed garlic).
Sweet Smoked Paprika: Be sure to use sweet smoked paprika, not hot, for the perfect flavor.
Optional Chorizo Addition: For extra flavor, add 100g of chorizo when frying your sausages.
