    Slow Cooker Lazy Lasagna

If you love the comforting flavor of lasagna but don’t want to spend your evening layering noodles, making sauce, and washing a mountain of dishes, this 4-Ingredient Slow Cooker Lazy Lasagna is the perfect shortcut. With canned diced tomatoes, ground beef, pasta, and mozzarella, you can create a hearty, cheesy dinner with very little hands-on preparation.

Everything cooks together in the slow cooker, giving you tender pasta, savory ground beef, juicy tomatoes, and plenty of melted cheese in every bite. It’s an easy slow cooker dinner recipe that works especially well for busy weeknights, family meals, and budget-friendly cooking.

Why You’ll Love This Slow Cooker Lazy Lasagna

    • Only 4 main ingredients – Simple ingredients make this recipe easy to prepare.
    • Minimal prep – Brown the beef, layer the ingredients, and let the slow cooker do the work.
    • Budget-friendly – Affordable pantry and refrigerator staples create a filling family meal.
    • One-pot cleanup – Everything cooks in the slow cooker, so there are fewer dishes afterward.
    • Family-friendly comfort food – Cheesy pasta and tomato sauce are an easy combination to please a crowd.
    • Great for busy weeknights – Perfect when you want a homemade dinner without spending hours in the kitchen.
    • Easy to customize – Add vegetables, extra cheese, or your favorite seasonings.

    Ingredients

    • 2 cans (14.5 ounces each) diced tomatoes, undrained
    • 1 pound ground beef, browned and drained
    • 8 ounces uncooked rotini or penne pasta, about 2½ cups
    • 2 cups shredded mozzarella cheese, divided

Optional: salt, black pepper, and Italian seasoning for extra flavor.

How to Make Slow Cooker Lazy Lasagna

    1. Add the tomatoes

Pour both cans of diced tomatoes, including their juices, into the bottom of a 4- to 6-quart slow cooker. Spread them into an even layer.

The tomato juices provide moisture for the pasta as it cooks and create the saucy base for the dish.

    2. Add the ground beef

Spread the cooked and drained ground beef evenly over the tomatoes. Break apart any large pieces so the meat is distributed throughout the slow cooker.

    3. Add the pasta

Scatter the uncooked rotini or penne evenly over the beef. Lightly press the pasta down into the tomato mixture so it can absorb some of the liquid while cooking.

    4. Add the cheese

Sprinkle 1½ cups of the shredded mozzarella over the pasta. Keep the remaining ½ cup refrigerated until the final step.

    5. Slow cook

    Cover and cook:

    • HIGH: 2 to 2½ hours
    • LOW: 3½ to 4 hours

Cook until the pasta is tender. Avoid repeatedly removing the lid because this allows heat and steam to escape.

    6. Stir everything together

Once the pasta is tender, gently stir the tomatoes, beef, pasta, and melted cheese together. The mixture should become rich, saucy, and reminiscent of traditional lasagna.

    7. Finish with mozzarella

Sprinkle the remaining ½ cup of mozzarella over the top. Cover again and leave on WARM or LOW for about 5 to 10 minutes, until the cheese melts.

Season with salt, pepper, or Italian seasoning if desired, then serve hot.

    Serving Ideas

Serve this easy crockpot lasagna with a simple green salad, steamed vegetables, roasted broccoli, or sliced cucumbers and tomatoes.

Garlic bread or warm buttered toast also makes a great side because it can soak up the extra tomato sauce.

For an extra cheesy finish, sprinkle a little Parmesan over each serving before bringing it to the table.

    Easy Variations

    Add vegetables

For an easy nutritional boost, stir in baby spinach or thawed frozen spinach during the final 20 minutes of cooking.

You can also add finely chopped bell peppers, mushrooms, or zucchini if your family enjoys vegetables.

    Make it extra cheesy

Replace part of the mozzarella with an Italian cheese blend, or add small spoonfuls of ricotta near the end of cooking for a creamier lasagna-style texture.

    Add some heat

Use hot Italian-style ground sausage if desired, or add a pinch of crushed red pepper flakes before serving.

    Change the pasta

Rotini and penne work well, but you can also use similar-sized pasta shapes such as shells, bowties, or ziti. Keep the total amount close to 8 ounces of dry pasta.

    Storage and Reheating

Store leftover lazy lasagna in an airtight container in the refrigerator for up to 3–4 days.

Reheat individual portions in the microwave until heated through, adding a small splash of water or tomato sauce if the pasta has absorbed too much moisture.

    Recipe Benefits

This recipe is especially useful for busy households because it combines simple ingredients, minimal preparation, and easy cleanup. Ground beef provides a hearty protein source, while tomatoes contribute flavor and nutrients. Adding spinach or other vegetables can make the meal more balanced without significantly increasing preparation time.
