Ingredients:
2 pounds beef stew meat, cut into 1-inch cubes
Salt and pepper to taste
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 carrots, sliced
3 stalks celery, sliced
1 cup pearl barley
6 cups beef broth
1 can (14.5 ounces) diced tomatoes, undrained
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 cup frozen peas
Instructions:
1. Prepare the Beef: Season the beef stew meat with salt and pepper. Heat olive oil in a large skillet over medium-high heat and brown the beef in batches. Transfer each batch to your slow cooker.
