Slow Cooker Chipotle Meatloaf

Ingredients:
1 1/2 pounds ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1-2 chipotle peppers in adobo sauce, chopped
2 tablespoons adobo sauce
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped fresh parsley
Directions:
1. In a large mixing bowl, combine breadcrumbs and milk. Let it sit for a minute to absorb and create a moist base.
2. Add the ground beef, egg, onion, garlic, chipotle peppers, adobo sauce, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix gently using your hands or a spoon, being careful not to overmix to keep the meatloaf tender.
3. Shape the mixture into a loaf and place it in your slow cooker.
4. Cover and cook on low heat for 6-7 hours, or until the meatloaf reaches an internal temperature of 160°F.
5. Carefully remove the meatloaf from the slow cooker. Let it rest for 10 minutes to lock in the juices before slicing and serving.
