    • 1 medium yellow onion, diced
    • 4 cups frozen diced hash browns with peppers & onions (O’Brien style)
    • 3 cups low-sodium beef broth
    • 3 cups shredded cheddar cheese (divided)

    Directions

    1. In a skillet over medium-high heat, brown the ground beef until fully cooked and crumbly (7–10 minutes). Drain excess fat.
    2. Add diced onion and cook until softened and lightly golden (3–5 minutes).
    3. Transfer beef and onion mixture to the slow cooker.
    4. Add frozen hash browns and beef broth. Stir gently to combine.
    5. Cover and cook:
      • LOW for 5–6 hours OR
      • HIGH for 2 1/2–3 hours
        until potatoes are tender.
    6. Reduce heat to LOW. Stir in 2 1/2 cups cheddar cheese until melted and creamy.
    7. Top with remaining cheese, cover, and let melt for 5–10 minutes.
    8. Serve hot and enjoy!
