    Slow Cooker Beef and Potato Supper

Made with tender beef stew meat, hearty potatoes, and a rich, savory gravy, this recipe delivers old-fashioned comfort food with modern, hands-off convenience.

    Ingredients:

    1½–2 lbs beef stew meat, cut into 1-inch cubes
    4 medium russet or Yukon Gold potatoes, diced
    2 medium carrots, sliced (optional but recommended)
    1 medium yellow onion, diced
    3 cloves garlic, minced
    1 cup beef broth (low sodium)
    1 (10.5 oz) can condensed cream of mushroom soup (or cream of celery)
    2 tbsp tomato paste or ketchup
    1 tbsp Worcestershire sauce
    1 tsp dried thyme
    1 tsp dried rosemary, crushed
    1 tsp paprika
    1 tsp salt (plus more to taste)
    ½ tsp black pepper
    2 tbsp olive oil (optional, for browning beef)
    Optional Thickener
    2 tbsp cornstarch
    2 tbsp cold water
    Garnish (Optional): Fresh parsley, chopped

    Directions:

    Dice potatoes into evenly sized cubes to prevent mushiness. Chop onion, slice carrots, and mince garlic.

    Heat olive oil in a skillet over medium-high heat. Pat beef dry, season lightly, and sear until browned on most sides. Transfer to slow cooker.

    Add potatoes, carrots, onion, and garlic over the beef in the slow cooker.

    Whisk together beef broth, cream of mushroom soup, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, salt, and pepper.

    Pour sauce over beef and vegetables. Gently stir to coat.

    Cover and cook on LOW for 7–9 hours or HIGH for 4–5 hours, until beef is fork-tender and potatoes are cooked through.

    Mix cornstarch and water, stir into slow cooker during the last 20–30 minutes, and cook until gravy thickens.

    Taste, adjust seasoning, and garnish with parsley if desired
