    Slow Cooker Beef and Mushroom Stew

Serve it over creamy mashed potatoes or buttery egg noodles for the perfect hearty meal.

    Recipe Details:

    Prep Time: 15 minutes
    Cook Time: 7–8 hrs (LOW) / 4–5 hrs (HIGH)
    Total Time: 7.5–8.5 hrs

    Ingredients:

     

    2 lbs beef stew meat, cut into 1-inch pieces
    Salt & black pepper, to taste
    2 tbsp olive oil
    1 large onion, diced
    3 cloves garlic, minced
    8 oz mushrooms, sliced
    3 cups beef broth
    1/4 cup Worcestershire sauce
    2 tbsp tomato paste
    1/4 cup flour
    1 tsp dried thyme
    1 tsp dried rosemary
    Fresh parsley, chopped (for garnish

     

    Directions:

     

    1. Season beef with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear beef until browned on all sides (about 5 minutes). Transfer to your slow cooker.

    2. In the same skillet, sauté onions and garlic for 2–3 minutes until fragrant and softened. Add to the crockpot.

    3. Add mushrooms, beef broth, Worcestershire sauce, tomato paste, thyme, and rosemary. Stir well to combine.

    4. In a small bowl, whisk flour with a little water to form a slurry. Stir into the slow cooker mixture.

    5. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is fork-tender.

    6. Garnish with fresh parsley. Serve hot over mashed potatoes, rice, or egg noodles for a comforting slow cooker beef dinner.
