    These slow cooker Amish peasant potatoes are an easy, budget-friendly comfort-food side dish made with only potatoes, chicken broth, and butter. Thick potato wedges cook slowly until tender and flavorful, soaking up a rich, buttery broth that makes every bite warm and satisfying.

    1. Lightly grease the inside of a 4- to 6-quart slow cooker with butter or nonstick cooking spray.
    2. Scrub the potatoes well, pat them dry, and cut each potato into 6 to 8 thick wedges. Thick wedges hold their shape better during slow cooking.
    3. Arrange the raw potato wedges in the slow cooker. A little overlap is fine, but try to keep the potatoes in an even layer for more consistent cooking.
    4. Pour the chicken broth over the potatoes. The potatoes should be partly covered by the broth, with some of the wedges still visible above the liquid.
    5. Scatter the butter pieces over the potatoes.
    6. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the potatoes are fork-tender but still hold their wedge shape.
    7. Spoon the potatoes into bowls and ladle the buttery broth over the top. Season with salt and black pepper to taste, then serve warm.
