    Roasted Carrots with Whipped Ricotta and Spicy Hot Honey Drizzle

     

    Looking for the ultimate sweet and savory side dish? These oven-roasted baby carrots topped with creamy whipped ricotta and a hot honey glaze are the perfect addition to your dinner table. This recipe is easy, healthy, and bursting with bold flavors ideal for weeknight meals, holiday dinners, or veggie-forward entertaining!

    Ingredients:

    1 lb baby carrots, peeled
    2 tbsp olive oil
    Salt and freshly ground black pepper, to taste
    ½ cup whole-milk ricotta cheese
    1 tbsp honey
    1 tsp hot sauce (adjust heat to taste)
    Fresh parsley for garnish (optional)

    Instructions:

    1. Preheat your oven to 400°F (200°C).

    2. In a bowl, toss baby carrots with olive oil, salt, and pepper.

    3. Spread the carrots evenly on a parchment-lined baking sheet.

    4. Roast for 25-30 minutes, turning halfway, until tender and caramelized.

    5. Meanwhile, whip the ricotta cheese until smooth and fluffy using a hand mixer or whisk.

    6. In a small bowl, combine the honey and hot sauce, then warm gently to blend the flavors.

    7. Transfer roasted carrots to a serving dish. Spoon the whipped ricotta over the top.

    8. Drizzle generously with the spicy hot honey glaze.

    9. Garnish with chopped fresh parsley if desired.
