    Revolutionary Cheesy Potato and Veggie Bake

    Transform your usual potato dish with this game-changing technique! This simple recipe combines grated potatoes, vegetables, and cheese for a delicious, healthy bake. Perfect for any meal, it’s an easy way to enjoy comfort food with a nutritious twist. Try this flavorful, cheesy potato bake and impress your family and friends!

     

    Ingredients:

    – 3 large potatoes, peeled and grated
    – 1 onion, finely chopped
    – 1 carrot, peeled and grated
    – 1 pepper, finely chopped
    – Olive oil, for sautéing
    – Salt, to taste
    – Chives, chopped
    – 3 eggs
    – 300 ml milk
    – 200 g wholemeal flour
    – 2 tsp baking powder
    – 150 g cheese, grated

    Directions:

    1. Preheat your oven to 350°F (175°C).

    2. In a large skillet, heat a splash of olive oil over medium heat.

    3. Add the grated potatoes, chopped onion, grated carrot, and finely chopped pepper. Sauté until the vegetables are tender.

    4. Season with salt and stir in the chopped chives.

    5. In a separate bowl, whisk together the eggs and milk.

    6. Gradually add the wholemeal flour and baking powder to the egg mixture, stirring until smooth.

    7. Fold the sautéed vegetables into the batter.

    8. Pour the mixture into a greased baking dish and sprinkle the grated cheese on top.

    9. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

    10. Allow it to cool slightly before serving.

    Prep Time: 20 minutes | Cooking Time: 30 minutes | Total Time: 50 minutes | Servings: 6
