    Potato Pancakes with Savory Beef and Cheddar Cheese

    Crispy on the outside, tender on the inside, these potato pancakes with beef and cheese are the ultimate comfort food. Perfect for breakfast, brunch, or a hearty dinner, they combine golden russet potatoes, savory cooked beef, and melted cheddar cheese for an irresistible flavor.

    Ingredients:

    2 large russet potatoes, peeled and grated
    1/2 cup all-purpose flour
    1/4 cup finely chopped onion
    1/4 cup finely chopped cooked beef, crumbled
    1/4 cup shredded cheddar cheese
    1 large egg, beaten
    1 teaspoon salt
    1/2 teaspoon black pepper
    2 tablespoons olive oil

    Directions:

    Mix the ingredients: In a large bowl, combine the grated potatoes, flour, onion, cooked beef, cheddar cheese, egg, salt, and black pepper. Gently stir until just combined avoid overmixing to keep pancakes tender.
    Cook the potato pancakes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Drop rounded tablespoons of the potato mixture onto the skillet and flatten slightly with a spatula.
    Golden perfection: Cook each pancake for 3-4 minutes per side, until golden brown and cooked through. Add the remaining tablespoon of olive oil if needed to prevent sticking.
    Serve and enjoy: Serve immediately with sour cream, applesauce, or a simple ketchup-mustard dip.
