Perfect for busy weeknights, this easy baked burrata pasta recipe comes together with very little effort while delivering rich flavor and a silky, creamy sauce. Fresh summer corn creates incredible sweetness, while frozen corn makes this recipe convenient all year long. Whether you’re searching for a comforting vegetarian dinner, an easy pasta bake, or a simple family meal, this recipe checks every box.

Why You’ll Love This Sweet Corn Burrata Pasta

    • Only 4 simple ingredients
    • Ready in under an hour
    • Rich, creamy, and comforting
    • Perfect for busy weeknight dinners
    • Family-friendly vegetarian recipe
    • Great for using fresh summer corn or frozen corn
    • Easy to customize with herbs, Parmesan, or chili flakes
    • Excellent for meal prep and leftovers

    Ingredients

    • 12 ounces rigatoni (or other short pasta)
    • 3 cups sweet corn kernels (fresh or frozen)
    • 8 ounces burrata cheese
    • 1 cup heavy cream
    • 1½ teaspoons kosher salt
    • ½ teaspoon black pepper
    • 2 tablespoons olive oil (optional)
    • ¼ cup reserved pasta water (if needed)

    Instructions

    1. Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish with olive oil.
    2. Bring a large pot of salted water to a boil. Cook the rigatoni for 2–3 minutes less than package directions so it remains very firm.
    3. Spread the sweet corn evenly in the prepared baking dish.
    4. Whisk together the heavy cream, salt, and black pepper.
    5. Drain the pasta, reserving about ½ cup of the cooking water.
    6. Add the pasta to the baking dish with the corn. Pour the cream mixture over the top and gently toss everything together. Add a splash of reserved pasta water if needed to keep the mixture creamy.
    7. Cover tightly with aluminum foil and bake for 18–20 minutes, until the pasta is tender and the cream is bubbling.
    8. Remove the foil and tear the burrata into large pieces. Scatter it over the hot pasta and drizzle lightly with olive oil.
    9. Return the dish to the oven uncovered for 5–7 minutes, just until the burrata softens and becomes creamy.
    10. Let the pasta rest for 5 minutes before serving. Garnish with fresh basil, parsley, or grated Parmesan if desired.

    Variations

    • Add grated Parmesan for extra cheesy flavor.
    • Stir in fresh basil or parsley after baking.
    • Sprinkle with crushed red pepper flakes for gentle heat.
    • Use penne, shells, or ziti instead of rigatoni.
    • Replace half the heavy cream with whole milk for a lighter version.

    Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of milk or cream to restore the creamy texture.

    Benefits of This Recipe

This creamy sweet corn burrata pasta is an ideal comfort food that requires minimal preparation and delivers maximum flavor. Sweet corn provides natural sweetness and fiber, while burrata creates a luxurious creamy texture without complicated cooking techniques. It’s an affordable vegetarian dinner that feels elegant enough for guests while remaining simple enough for busy weeknights. The recipe is highly versatile, making it perfect for both fresh summer produce and pantry-friendly frozen ingredients, ensuring you can enjoy this comforting baked pasta any time of year.
