One-Pot Cabbage Casserole

Ingredients:
1 lb ground beef
1 small onion, diced
3 garlic cloves, minced
4 cups chopped cabbage
1 cup uncooked rice
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 teaspoon paprika
1 teaspoon dried thyme
2 cups beef broth
1 cup shredded cheddar cheese
Salt and pepper to taste
Directions:
1. In a large pot or deep skillet, heat a little oil over medium heat. Add the ground beef and diced onions, cooking for 5-7 minutes until the beef browns and onions soften. Drain excess grease.
2. Add the minced garlic, cooking for another minute until fragrant.
3. Stir in the chopped cabbage, then mix in the uncooked rice, ensuring it’s evenly combined.
4. Pour in diced tomatoes (with juice) and tomato sauce. Season with paprika, thyme, salt, and pepper.
5. Add the beef broth, bring to a simmer, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the rice is tender.
6. Once the rice is cooked, sprinkle cheddar cheese on top, cover, and let it melt.
