    Mexican Tater Tot Casserole

     

     

    This Mexican Tater Tot Casserole is a hearty, flavorful dish that combines seasoned ground beef, black beans, and corn, all topped with crispy tater tots and melted cheddar cheese. It’s an easy, crowd-pleasing meal perfect for busy weeknights or family gatherings. The recipe offers a satisfying mix of textures and bold flavors, making it a comfort food favorite. Plus, the option to add sour cream on top brings a creamy finish to every bite. This casserole is sure to be a hit at your dinner table!

    Ingredients:

    – 1 pound ground beef
    – 1 small onion, chopped
    – 1 clove garlic, minced
    – 1 packet taco seasoning
    – 1 cup corn (frozen or canned)
    – 1 can black beans, drained and rinsed
    – 1 cup salsa
    – 1 cup shredded cheddar cheese
    – 1/2 cup sour cream (optional)
    – 4 cups frozen tater tots

    Directions:

    1. Preheat your oven to 375°F (190°C).

    2. In a large skillet, brown the ground beef over medium heat, then drain any excess fat.

    3. Add the onion and garlic, cooking until the onion becomes translucent.

    4. Mix in the taco seasoning, corn, black beans, and salsa. Let it simmer for 5 minutes, stirring occasionally.

    5. Spread the beef mixture evenly in a greased 9×13-inch baking dish.

    6. Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture.

    7. Arrange the tater tots in a single layer on top of the cheese.

    8. Bake for 25-30 minutes, or until the tater tots are golden brown and crispy.

    9. Serve hot, optionally garnished with a dollop of sour cream.
