Ingredients:
1 lb ground sirloin (or lean ground beef)
2 cups medium pasta shells (uncooked)
4 oz tomato sauce
1/4 small onion, chopped
1/4 bell pepper, sliced
4–5 cups water
1 beef bouillon cube
1 tsp ground cumin
1 tsp chili powder
1 tsp smoked paprika
1/4 tsp cayenne pepper (optional for heat)
1 tsp garlic powder
1/4 tsp salt (adjust to taste)
1/2 tsp black pepper
Instructions:
1. In a large Dutch oven or deep skillet, brown the ground sirloin over medium heat. Drain any excess fat.
2. Add the uncooked shell pasta to the browned beef. Stir and let the pasta lightly toast with the meat for 1–2 minutes.
3. Mix in the chopped onion, sliced bell pepper, and all spices including cumin, chili powder, paprika, cayenne, garlic powder, salt, and pepper.
4. Stir in the tomato sauce and crumble in the beef bouillon cube. Make sure it’s fully dissolved and evenly mixed.
5. Pour in 4–5 cups of water—just enough to cover the pasta and meat mixture. Bring to a simmer.
6. Cover and simmer for about 5 minutes. Stir, then cover again and cook an additional 10 minutes or until pasta shells are tender and the sauce thickens.
7. Serve hot and enjoy this hearty Mexican comfort dish!
