    Ingredients

    For the Meatballs

    • 1½ pound ground beef (80–85% lean)
    • ½ cup grated Parmesan cheese
    • 1 large egg
    • ¼ cup heavy cream
    • ¼ cup finely minced onion
    • 2 garlic cloves, minced
    • 1 teaspoon Italian seasoning
    • ½ teaspoon dried oregano
    • 1 teaspoon salt
    • ½ teaspoon black pepper
    • ¼ teaspoon red pepper flakes (optional)
    • 1 tablespoon olive oil (optional, for browning)

    For the Bake

    • 1½ cups sugar-free marinara sauce
    • ½ cup ricotta cheese (optional)
    • 1½ cups shredded mozzarella cheese
    • ½ cup shredded cheddar or Colby Jack cheese
    • 2 tablespoons chopped fresh parsley

    Instructions

    1. Preheat the oven to 375°F (190°C) and lightly grease a 9×9-inch baking dish.
    2. In a large bowl, combine the ground beef, Parmesan, egg, heavy cream, onion, garlic, Italian seasoning, oregano, salt, pepper, and red pepper flakes. Mix until just combined.
    3. Shape the mixture into 16–20 evenly sized meatballs.
    4. For extra flavor, brown the meatballs in olive oil over medium-high heat for 2–3 minutes per side. This step is optional.
    5. Spread about ½ cup of marinara sauce across the bottom of the baking dish. Arrange the meatballs in a single layer.
    6. Spoon the ricotta between the meatballs if using, then pour the remaining marinara sauce over the top.
    7. Cover with foil and bake for 20 minutes.
    8. Remove the foil and sprinkle the mozzarella and cheddar evenly over the meatballs.
    9. Bake uncovered for another 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.
    10. For an extra golden topping, broil for 1–2 minutes.
    11. Let the casserole rest for 5–10 minutes before serving. Garnish with fresh parsley.

    Recipe Tips

    • Use all ground beef or substitute ground turkey for a lighter version.
    • Add almond flour instead of breadcrumbs to keep the recipe keto-friendly.
    • Mix cream cheese into the marinara sauce for an even creamier casserole.
    • Add mushrooms, spinach, zucchini, or bell peppers for extra vegetables.
    • Store leftovers in the refrigerator for up to 4 days.
    • Freeze for up to 3 months and reheat in the oven until hot.
