Ingredients:

1 lb Italian sausage (mild or spicy)

1 onion, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 can diced tomatoes

1 cup shredded mozzarella cheese

Salt & pepper to taste

Instructions:

Preheat oven to 375°F.
In a large skillet, cook the Italian sausage until browned. Add onions, bell peppers, and garlic, sautéing until softened.
Stir in diced tomatoes, season with salt & pepper, and mix well.
