    Instructions

    In a separate bowl, mix flour and baking soda. Add to the creamed mixture alternately with buttermilk, mixing until just combined. Stir in coconut and pecans.

    In a clean bowl, beat egg whites until stiff peaks form. Gently fold 1/4 of the egg whites into the batter, then carefully fold in the rest.
