    Irresistible Mexican Street Corn Fritters

    – In a small bowl, whisk together sour cream (or Greek yogurt), mayonnaise, fresh lime juice, chopped cilantro, salt, and pepper. Stir until the mixture is smooth and creamy. Set aside for serving.

    2. Create the Fritter Batter:
    – In a large mixing bowl, combine corn kernels, flour, cornmeal, eggs, chopped cilantro, green onions, cotija cheese, chili powder, cumin, salt, and pepper. Mix thoroughly until everything is well combined and forms a cohesive batter.

    3. Cook the Fritters:
    – Heat a large skillet over medium-high heat, adding enough olive oil to cover the bottom. Scoop about 1/4 cup of the corn mixture, shape into patties, and carefully place them in the hot skillet. Cook each fritter for 3-4 minutes per side, or until they are golden brown and crispy. Transfer to a plate lined with paper towels to absorb any excess oil.
