     Ingredients

    • 6 large eggs (cold)
    • 1 cup vegetable oil
    • ½ cup (1 stick) salted butter
    • 6 oz dark chocolate, finely chopped

     Baking Time

    • Prep Time: 20 minutes
    • Bake Time: 30–35 minutes
    • Cooling Time: 1 hour
    • Total Time: About 2 hours

     Instructions

    1. Preheat oven:
      Set oven to 350°F (175°C). Line a 9×13-inch metal pan with foil and spray with cooking spray.
    2. Mix dry ingredients:
      Sift together flour, cocoa powder, and salt in a bowl. Set aside.
    3. Whip eggs and sugar:
      In a stand mixer, beat sugar, vanilla, espresso powder, and eggs on medium-high speed for 7–9 minutes until thick, fluffy, and pale yellow.
    4. Melt chocolate mixture:
      Heat vegetable oil and butter in a saucepan until butter melts. Remove from heat and stir in chopped dark chocolate until smooth.
    5. Combine everything:
      Reduce mixer speed to low. Slowly add melted chocolate mixture, then the dry ingredients. Mix briefly, then gently fold with a spatula.
    6. Bake:
      Pour batter into prepared pan. Bake for 30–35 minutes, until edges are set and center is slightly soft.
    7. Cool and slice:
      Let brownies cool completely. Lift using foil, then cut into squares.
