Hearty Slow Cooker Minestrone Soup Recipe
Warm up with this cozy and nutritious Slow Cooker Minestrone Soup, loaded with hearty vegetables, beans, and savory tomato flavor. This easy crockpot vegetable soup is perfect for busy weeknights, meal prep, or a healthy family dinner!
Ingredients:
2 cans crushed tomatoes
1 large onion, diced
2 cups chicken stock (or vegetable broth for a vegetarian version)
2 cups water
1/4 cup grated Parmesan cheese
2 tablespoons tomato paste
2 teaspoons Worcestershire sauce
Salt & pepper to taste
2–3 cloves garlic, minced
Vegetables:
1 large carrot, chopped
1 zucchini, chopped
2 potatoes, peeled and diced
2 celery sticks, chopped
1 can kidney beans, drained and rinsed
Optional:
250g small pasta (like elbow macaroni or ditalini)
Instructions:
1. Prep the veggies: Wash, peel, and chop all your vegetables into bite-sized pieces.
2. Combine in the slow cooker: Add all the ingredients (except pasta) into your slow cooker including the crushed tomatoes, chicken stock, water, Parmesan, tomato paste, Worcestershire sauce, garlic, and seasonings.
3. Cook: Set your crockpot to high and cook for 4 hours, or until vegetables are tender.
4. Blend slightly: Use an immersion blender to gently blitz the soup, leaving some texture. This makes it more kid-friendly and comforting.
5. Add pasta (optional): Stir in cooked pasta during the last 10–15 minutes or just before serving for an even heartier meal.
Tips:
For a vegetarian version, use vegetable broth instead of chicken stock.
