    Hearty Sausage, White Bean & Spinach Soup

    Looking for a healthy, cozy, and protein-packed soup recipe that’s easy to make and full of flavor? This Hearty Sausage, White Bean & Spinach Soup is the perfect comfort food! Made with lean sausage, creamy cannellini beans, and fresh spinach, this nourishing soup is ideal for quick dinners, meal prep, and cold evenings.

     

    Ingredients:

    1 lb lean ground turkey sausage (or chicken sausage)

    4 cups low-sodium chicken broth

    1 can (15 oz) white beans (cannellini), drained & rinsed

    2 cups fresh spinach (or kale)

    1 cup carrots, diced

    ½ cup onion, diced

    2 cloves garlic, minced

    1 tbsp olive oil

    ½ tsp dried thyme

    ½ tsp Italian seasoning

    ¼ tsp red pepper flakes (optional)

    Salt & black pepper to taste

     

    Instructions:

    1. Brown the Sausage

    Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned and slightly crispy. Drain excess grease if needed.

    2. Sauté the Vegetables

    Add diced onion, garlic, and carrots. Cook until soft and fragrant this builds a rich flavor base.

    3. Add Broth & Beans

    Pour in the chicken broth and stir in the white beans, thyme, and Italian seasoning.

    4. Simmer to Perfection

    Let the soup simmer for 10–15 minutes to blend all the delicious flavors.

    5. Add the Greens

    Stir in spinach (or kale) and cook until wilted and vibrant.

    6. Finish & Season

    Add red pepper flakes (optional), salt, and black pepper to taste. Serve hot and enjoy!
