    Grilled Thai Chicken Skewers with Coconut Curry Marinade

    Grilled Thai Chicken Skewers with Coconut Curry Marinade

    Juicy, smoky, and packed with flavor, these Grilled Thai Chicken Skewers are marinated in a fragrant coconut curry sauce with lime, garlic, and ginger. Perfect for summer grilling, backyard BBQs, or a quick weeknight dinner, this Thai-inspired chicken recipe is healthy, easy, and absolutely irresistible.

    Ingredients:

    For the Chicken & Marinade:
    1.5 lbs (700g) boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
    ½ cup full-fat coconut milk
    2 tbsp Thai red curry paste
    1 tbsp fish sauce
    1 tbsp brown sugar
    1 tsp lime zest
    2 tsp fresh lime juice
    2 cloves garlic, minced
    1 tsp grated fresh ginger
    1 tbsp neutral oil (for grilling)
    Bamboo or metal skewers (soak bamboo skewers in water for 30 minutes to prevent burning)
    Optional Garnish:
    Fresh cilantro, chopped

    Directions:

    In a mixing bowl, whisk together the coconut milk, Thai red curry paste, fish sauce, brown sugar, lime zest, lime juice, garlic, and ginger until smooth.

    Add the chicken pieces to the bowl, coating them well. Cover and refrigerate for at least 30 minutes (or up to 4 hours) for maximum flavor.

    Remove chicken from the marinade and thread onto skewers. Discard leftover marinade.

    Preheat grill (or grill pan) to medium-high heat. Brush with oil, then cook chicken skewers for 10–12 minutes, turning occasionally, until cooked through and slightly charred.

    Garnish with fresh cilantro and serve hot with jasmine rice, peanut sauce, or a refreshing cucumber salad.

    Recipe Tips & Variations:

    Swap chicken thighs for chicken breasts if you prefer leaner meat.

    For extra heat, add chili flakes or sriracha to the marinade.

    These skewers can also be cooked on a stovetop grill pan or baked in the oven at 400°F (200°C) for 20–25 minutes.
