Garlic Parmesan Chicken Meatloaves with Creamy Mushroom Sauce

Ingredients:
1 lb ground chicken
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1 large egg
2 cloves garlic, minced
1/2 tsp dried Italian seasoning
Salt and pepper, to taste
1 tbsp olive oil
1 cup mushrooms, sliced
1/4 cup chicken broth (or water)
1/4 cup heavy cream
1/4 cup grated mozzarella cheese (optional, for topping)
Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat and Prepare:
Preheat your oven to 375°F (190°C). Grease a baking dish or line a baking sheet with parchment paper.
2. Mix the Meatloaves:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
3. Form the Loaves:
Shape the chicken mixture into 4-6 small meatloaves and place them in the prepared baking dish or on the baking sheet.
4. Sauté the Mushrooms:
Heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté for 4-5 minutes until tender and golden brown.

Pour in the chicken broth and heavy cream. Stir and cook for 2-3 minutes until the sauce thickens slightly.
6. Bake:
Pour the creamy mushroom sauce over the meatloaves and bake for 25-30 minutes or until the meatloaves reach an internal temperature of 165°F (74°C).
7. Optional Topping:
Sprinkle with mozzarella cheese in the last 5 minutes of baking and let it melt.
8. Garnish and Serve:
Remove from the oven and garnish with freshly chopped parsley.
