INGREDIENTS:
- 2 cups of egg whites
- 1 cup raw spinach
- 1/2 cup cherry tomatoes
- 1/2 cup mushrooms
- 2 tbs feta cheese
- 1/4 tsp salt (optional condiment)
INSTRUCTIONS:
Pre heat over at 350 degrees.
Lightly spray cupcake tin with non stick spray.
Cook mushrooms, tomatoes, and spinach in a skillet.
Divide veggies into 8 cupcake cups.
Pour egg whites into each cupcake cup. Fill to the top.
Sprinkle feta cheese equally on top.
*optional* Spring salt equally on top.
Bake for 25-30 minutes (350 degrees)
