    • 6 medium russet potatoes
    • 4 tablespoons unsalted butter
    • 1½ cups shredded sharp cheddar cheese, divided

    Instructions

    Step 1: Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash and dry the potatoes thoroughly. Prick each potato several times with a fork and bake for 50–60 minutes until tender.

    Step 2: Prepare the Filling

    Allow potatoes to cool slightly. Cut each potato in half lengthwise and carefully scoop out the centers, leaving a thin shell.

    Place the potato flesh into a bowl and add butter and 1 cup of cheddar cheese. Mash until smooth, creamy, and fluffy. Season with salt and pepper if desired.

    Step 3: Fill the Potato Boats

    Spoon the potato mixture back into the potato shells, creating generous mounds of filling.

    Step 4: Add Cheese and Bake Again

    Top with the remaining cheddar cheese and return to the oven for 15–20 minutes until golden brown, bubbly, and crispy around the edges.

    Step 5: Serve
