1 lb ground beef

1 small onion, chopped

1 packet taco seasoning or 2 tbsp homemade taco seasoning

½ cup water

1 (10 oz) can red enchilada sauce (mild or medium)

1 (4 oz) can diced green chilies (optional for extra flavor)

2 cups shredded Mexican blend or cheddar cheese

6–8 small flour tortillas or corn tortillas (for gluten-free option)

¼ cup chopped cilantro or green onions (for garnish)

Sour cream, avocado slices, or salsa (for serving)

How to Make Layered Beef Enchiladas

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Step 2: Cook the Ground Beef Filling

In a skillet over medium heat, brown the ground beef with chopped onion until fully cooked. Drain any excess fat.
Add taco seasoning and water. Simmer for 2–3 minutes until thick. Stir in green chilies if using. Remove from heat.

Step 3: Layer the Enchiladas

Spread a spoonful of enchilada sauce on the bottom of the baking dish. Layer tortillas (cut to fit if needed), then add:

A portion of the beef mixture

A handful of shredded cheese

A drizzle of enchilada sauce

Repeat layers until ingredients are used up (usually 3 layers), finishing with tortillas, sauce, and cheese on top.

Step 4: Bake the Casserole

Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes, until cheese is melted and bubbly.
