    Easy Chicken Pot Pie Recipe 

     

    This easy chicken pot pie recipe is the ultimate comfort food dinner warm, creamy, and packed with flavor.     Ingredients

    • 3 cups shredded rotisserie chicken (cooked)
    • 3 cups frozen mixed vegetables
    • 1 small onion, finely chopped
    • 3 tbsp butter
    • 3 tbsp all-purpose flour
    • 2 cups chicken broth
    • 1 cup milk or half-and-half
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1/2 tsp thyme
    • 1/2 tsp garlic powder
    • 1/4 tsp rosemary (optional)
    • 1 tbsp fresh parsley (optional)
    • 2 refrigerated pie crusts
    • 1 egg + 1 tbsp water (egg wash)

    Instructions

    1. Preheat oven to 400°F (200°C). Grease pie tins.
    2. Melt butter in a pan, cook onion until soft.
    3. Stir in flour and cook 1 minute.
    4. Slowly whisk in chicken broth, then milk. Simmer until thick.
    5. Add seasonings, chicken, and vegetables. Mix well.
    6. Fill pie tins with mixture.
    7. Cover with pie crust, seal edges, and cut small slits.
    8. Brush with egg wash for a golden crust.
    9. Bake for 25–30 minutes until golden and bubbling.
    10. Let rest 10–15 minutes before serving.
