    Crunchy Frito Corn Salad with Black Beans and Cheddar

    Crunchy Frito Corn Salad with Black Beans and Cheddar

    Looking for the perfect summer side dish? This Frito Corn Salad is a creamy, crunchy, and flavor-packed crowd-pleaser! With sweet corn, black beans, Rotel, cheddar cheese, and crispy corn chips, it’s the ultimate go-to for BBQs, picnics, family gatherings, and weeknight dinners.

     

    Ingredients:

    2 (15 oz) cans sweet corn, drained

    1 (15 oz) can black beans, rinsed and drained

    1 (10 oz) can Rotel tomatoes with green chilies, drained

    1 bell pepper, diced (green, red, or yellow)

    1 cup shredded cheddar cheese

    ⅔ cup sour cream

    1 tbsp olive oil

    ½ tsp garlic powder

    ½ tsp onion powder

    ½ tsp ground cumin

    ½ tsp black pepper

    1 tsp salt

    1 (9.25 oz) bag Fritos corn chips, lightly crushed

     

    Instructions:

    1. In a large mixing bowl, combine the corn, black beans, Rotel, diced bell pepper, and shredded cheese.

    2. In a separate bowl, whisk together the sour cream, olive oil, garlic powder, onion powder, cumin, salt, and pepper until smooth and creamy.

    3. Pour the creamy dressing over the corn mixture and stir well to coat everything evenly.

    4. Just before serving, gently fold in the crushed Fritos to maintain that irresistible crunch.

    5. Serve immediately or chill in the fridge for up to 1 hour (add Fritos right before serving).

    Chill Time: 30 mins
    Servings: 6–8
    Total Time: 40 mins
