Ingredients:
2 large potatoes (approx. 500g)
Fresh parsley
Spring onions
Salt, pepper, garlic powder
2 medium eggs
2 tbsp cornstarch (around 40g)
Sweet paprika
7g fresh coriander
Vegetable oil (for frying)
For the sauce:
120g plain yogurt
Juice of half a lemon
Lemon zest
Fresh parsley
Half a cucumber, grated
Salt and pepper
1 clove garlic, minced
Spicy sauce (optional)
Olive oil
Instructions:
1. Prepare the Fritters:
Grate the potatoes and squeeze out all the excess moisture using a clean towel.
In a mixing bowl, combine the grated potatoes with parsley, chopped spring onions, salt, pepper, garlic powder, eggs, cornstarch, paprika, and coriander.
Form the mixture into fritters.
2. Frying:
Heat vegetable oil in a frying pan over medium-high heat.
Fry the fritters in batches until golden brown and crispy on both sides.
3. Make the Yogurt Sauce:
